My favorite ham! I discovered the Fricks Carver Ham about two years ago and was delighted!!! While a bit more expensive per lb than ‘water added’ and ‘Virginia hams,’ it is not much more expensive and considerably less than most so called artisanal hams, while what you are getting for taste and quality is what amounts to that than an artisanal ham!
You cannot beat the hardwood smoke taste that coats the meat! It is balanced with a hint of the brown sugar coating used by pioneers in their dry cure ham preservation methods. Essentially you are getting a ham very similar to the methods our pioneers used, just updated to the 20th/21st century in order to allow Frick’s to produce many.
As it is of pioneer tradition dry cure nature, the first thing that you will notice is that the meat is much more denser when slicing ‘fresh’ from the refrigerator. That is what the texture of ‘real’ ham is really like! Great for frying for a traditional ham and egg breakfast, soups for a much more favorable outcome, whole roast for a gathering dinner or just for snacking on! I have done them all.
Note, as for a whole roast, definitely cover the roasting pan tightly (as Frick’s recommends) for best results. Better yet, put in the bottom of the pan a cup of broth, veggies for side dishes and then tightly cover. With no water added, an excellent ham like this, is vulnerable to drying out when in the oven. If you want to crisp the top, then simply remove the top/or foil and set the oven to broil the last 15 minutes of cooking. It will lightly crisp the ham, while drying it out.

We have buying Frick Carver Hams from HEB for a couple of years. They are wonderful. Best hams I ever eaten and they are always raved about by our guests. We moved away from south Texas and HEB several months ago, We still have family in Texas and its not uncommon for us to buy 2 or 3 of your carver hams and bring them to Arkansas in an ice chest. Frick hams are well worth the effort.
